Monastic recipes. How to prepare alivanca, the old childhood sweet. Variant of sweet and fasting

For some it is the ultimate sweet, because it reminds them of their childhood, for others it is a dish they fall in love with from the first taste. It can be a dessert or a main course and is prepared with simple and readily available ingredients.

It is the dish that brings back a lot of memories, the cake recipe of yesteryear prepared with what was found in the kitchen tasting sophisticated dishes.

The secret of baked sorghum, or Alivanca, was revealed by Mother Ecaterina on Trinitas TV, the television of the Romanian Patriarchate.

The recipe presented by mother Ecaterina is from Bucovina, but the preparation is found, with small modifications, in most areas of the country.

Here is what we need for a tray of Alivancă:

100 g butter salt;

200 g of sugar;

4 eggs;

100 g cream;

250 ml of whipped milk/yogurt;

250 ml sweet milk;

the peel of 2 lemons;

vanilla essence;

200 g of sorghum;

150 g of flour;

2 teaspoons baking powder;

150 g of cheese.

I learned it in Bucovina, but I saw that many areas are adopting it. You basically make it with the ingredients that are in the house”said mother Ecaterina.

How is it prepared

Beat room temperature butter with a little salt and 200 grams of sugar. The cake can be made only with yogurt, but you can also use yogurt, cream and sweet milk, in the quantities mentioned above.

After incorporating the sugar with the butter, add the eggs, followed by the other ingredients, one by one: cream, whipped milk, sweet milk. Homogenize and add the peel of two lemons and, if desired, vanilla essence. Mix all the ingredients again. Add the cream, in the rain, and finally the wheat flour and two teaspoons of baking powder. Mix again very well, and at the end you can add a little cheese.

The composition is placed in a tray lined with baking paper and placed in the oven heated to a temperature of 150-170 degrees, for approximately 150-170 degrees.

We can also prepare a cream sauce with powdered sugar and we can also add jam when we serve the cake (after it has cooled).

Water or vegetable milk for fasting

The cake can also be prepared with non-animal ingredients, so that it can be eaten during fasting. In this case, milk is replaced with water or vegetable milk (coconut milk, almond milk, soy milk). Coconut flour can also be added instead of wheat flour. Candied fruits can also be added to the fasting option.

The food-cake can be served as a dessert, but it can also be eaten as a main course, because it is filling, says mother Ecaterina.
